Grilled Zucchini

I just love the summer vegetables. Especially since here we are able to get fresh squash from neighbors that grow it or from the local farms. It is so good when it is that fresh.

Usually I like to boil it then after draining it place butter adding salt and pepper. Always a big hit. Plus it is so easy. And we all know by now I like things easy!!!!

I found this recipe and thought it sounded a little different and you know it, easy. haha This is for 2 servings.



Grilled Zucchini












Ingredients

1 large zucchini
4 tablespoons butter
salt and pepper to taste

Directions
1. Preheat grill to medium high heat.
2. Clean outer skin of zucchini, and slice lengthwise into quarters. Place a pat of butter or margarine on each zucchini quarter, and season with salt and pepper to taste. Wrap all four quarters in one piece of aluminum foil.
3. Place foil wrapped zucchini on heated grill, and cook for 10 to 15 minutes on each side.
